<p>味付けに使用するのは、なんと<strong>「オイスターソース」</strong>です。<strong>「そばとオイスターソースって合うの？」</strong>と思う方も少なくないと思いますが、これが<strong>意外と合う</strong>んです^^</p>

<div class="blank-box bb-tab bb-memo bb-blue"><strong>豚ひき肉（150～200g）</strong>を<strong>ごま油（小さじ1）</strong>を引いた中火の小鍋で炒め、色が変わったら乱切りにした<strong>茄子（2本分）</strong>を加え2～3分ほど炒める。<strong>水（360ml）</strong>、<strong>オイスターソース（大さじ2）</strong>を加え、沸騰後さらに1分煮る。火を止めて1cm角に切った<strong>大葉（10枚分）</strong>を加えて、つけ汁の完成！茹でた<strong>蕎麦（200g）</strong>をつけてどうぞ！</div>

<p>下準備に続いて、つけ汁を作ります。まず、<strong>ごま油（小さじ1）</strong>を温めた小鍋で<strong>豚ひき肉（150～200g）</strong>を<strong>中火</strong>で炒めます↓</p>

<p>なお、我が家では4歳の息子と食べることが多いので、豚こまではなく<strong>「豚ひき肉」</strong>を使用することもあります。小さいお子さんも食べやすくなるのでオススメです^^</p>

<div class="blank-box bb-tab bb-memo bb-blue"><strong>薄力粉（200g）</strong>、<strong>卵（1個）</strong>、<strong>塩（小さじ1）</strong>、<strong>ごま油（大さじ2）</strong>、<strong>水（250ml）</strong>をダマなくなるまで混ぜ、細切りにした<strong>人参（1/2本）</strong>、<strong>玉葱（1/2個）</strong>、<strong>ニラ（1/2束）</strong>、<strong>豚こま（200g）</strong>を加え混ぜる。<strong>ごま油（大さじ1）</strong>を引いたフライパンに生地を1/3量ずつ入れ、両面を中火で4～5分ずつ焼けば完成！</div>

<p>裏返したら<strong>中火で4〜5分</strong>ほど焼いていきます。</p>
<p>生地を<strong>ヘラでギューッと押す</strong>ようにすると、<strong>平たくモチっと</strong>した、<strong>本場のチヂミの食感</strong>に近付きます^^↓</p>

<p>豚こま切れ肉は、なるべく<strong>細かく切られているもの</strong>がオススメです！ミンチを使わずとも、ミンチに似た食感を楽しめます^^</p>
<p>また、餃子の皮は<strong>「普通サイズ」</strong>を推奨します！「大判サイズ」だと、具材が少なく多少<strong>スカスカ感</strong>が出てしまう可能性も。どうしても<strong>「大判サイズ」</strong>を使用する場合は、<strong>肉やトッピングの量を多め</strong>にすることで、スカスカ感を軽減できます^^</p>
<h2><span id="toc2">「作り方」をチェック！</span></h2>
<p>作り方は次のメモのとおり（スクショ推奨）↓</p>
<div class="blank-box bb-tab bb-memo bb-blue"><strong>餃子の皮14枚</strong>の上に<strong>豚こま200g</strong>を等分に乗せ、軽く塩を振り、お好みで<strong>チーズ</strong>や<strong>大葉</strong>を乗せる。皮の端を水で濡らして筒状にくるみ、中火のフライパンで焼き色が付くまで焼く。裏返して、蓋をして中火で3分蒸し焼きすれば完成！</div>

<p><strong>縦長に置く</strong>ように意識すると、丸める時に作業がしやすくなります^^</p>
<p>続いて<strong>味付け</strong>です。<strong>塩</strong>を手でつまみ、パラパラとふりかけます。</p>
<p>少し見えにくいですが、<strong>塩の量のめやす</strong>はこんな感じです↓</p>

<p>トッピングで<strong>味付きのチーズ</strong>を乗せている場合は、<strong>塩は少なめ</strong>がベターです^^</p>

<p>続いて、<strong>餃子の皮</strong>を丸めていきます。</p>

・<strong>豚こま切れ肉</strong>…150g<br />
・<strong>水</strong>…150ml<br />
・<strong>市販ルー</strong>…1/4箱＊</p>
<p>＊市販ルーは次の材料で代用OK<br />
・<strong>ソース</strong>…大さじ3.5<br />
・<strong>ケチャップ</strong>…大さじ3.5<br />
・<strong>薄力粉</strong>…大さじ1<br />
・<strong>有塩バター</strong>…20g</p>

<p>市販のハヤシライス用ルーを使用すれば、<strong>調味料の計測が不要</strong>になるのでより時短に^^</p>
<p>また、無塩バターを使用する場合は、<strong>塩を小さじ1/2</strong>加えると味が整います。</p>
<p>なお、「バター20gを用意するたびに<strong>計量するのが面倒</strong>！」というかたには<strong>バターケース</strong>の利用をオススメします。保管容器とバターを<strong>定量で切り分けてくれるカッター</strong>がついているものが、便利なので超オススメです。我が家では、お菓子作り用の<strong>450gのバター</strong>も保管できる曙産業さんのケースを使用しています。ぜひ気に入ったものを探してみてくださいね。</p>

<p>この際に意識すべきポイントは次の2つです。</p>

<li>豚こまは、ダマにならないよう<strong>「ほぐしながら」</strong>耐熱容器に入れること</li>
<li>ラップは密閉せず一部<strong>隙間を空けて</strong>おくこと（破裂防止）</li>
</ul>
<p>続いて<strong>600wで6分</strong>加熱します↓</p>

<p>一度ラップを外し、全体をかき混ぜます。<strong>再度ラップ</strong>をかけ（少し隙間を空ける）、<strong>600wで3分</strong>加熱すれば完成！</p>

・<strong>ホールトマト缶</strong>…1缶<br />

・<strong>塩コショウ</strong>…小さじ1/2（×2回）<br />
・<strong>ケチャップ</strong>…大さじ1<br />
・<strong>砂糖</strong>…大さじ1<br />
・<strong>水</strong>…100ml</div>
<p>豚こま切れ肉は、<strong>大きめにカット</strong>されているものを選んで購入すると、<strong>巻く作業がやりやすく</strong>なります。なお、「しょうが焼き用」や「しゃぶしゃぶ用」にカットされたお肉でも美味しく作れます^^</p>
<p>なお、我が家では、ホールトマト缶といえば<strong>「ラ・プレッツィオーザ」</strong>が定番です。トマトの名産地である<strong>イタリア・カンパーニャ地方産</strong>のトマトのうち、さらに選りすぐられた高品質のトマトのみが使用さえれており、品質・味・価格どれをとっても納得のトマト缶です。日持ちするので、まとめて買ってストックがオススメです^^</p>

<p>混ぜ合わせたら<strong>ラップ</strong>をして電子レンジ<strong>600wで3分</strong>加熱します。加熱後は肉に<strong>赤い部分（生の部分）</strong>が残っていてもOKです。</p>
<p>そこに、<strong>味噌（大さじ2）</strong>、<strong>砂糖（大さじ2）</strong>、<strong>酒（大さじ1）</strong>、<strong>醤油（大さじ1/2）</strong>、粗みじん切りにした<strong>白ネギ（1/2本）</strong>を加えて混ぜ合わせます。</p>

<p>容器が小さく混ぜにくい場合は、<strong>最初に調味料のみ</strong>を加えて混ぜ、<strong>その後、白ネギ</strong>を加えて混ぜるという<strong>2段階</strong>で調理すると少し混ぜやすくなります。</p>

<p>混ぜあわせたら<strong>ラップをせず</strong>に、電子レンジ<strong>600wで3分</strong>加熱すれば完成です！軽く混ぜてみて、中心部まで火が通っているか、念のため確認してくださいね。</p>
<p>粗熱がとれたら、フタやラップをして冷蔵庫に保管すれば、体感で<strong>1週間は日持ち</strong>します。</p>
